Potato Salad with Vidalia Onions

  • 6 medium - large potatoes
  • 1 small VidaliaŽOnion
  • 2 hard boiled eggs
  • 1tsp. of salt
  • 1/2 tsp. of pepper
  • 1 cup of Mayonnaise (more or less as desired).





  1. Boil potatoes with skin on. When cooked, allow to cool then peel and cut into bite size pieces.
  2. Chop the VidaliaŽOnion into fine pieces.
  3. Chop the hard boiled eggs into small chunks.
  4. Mix all ingredients together, salt and pepper to taste.
  5. Chill and enjoy!
  6. Optional: Garnish with hard boiled egg slices and lightly sprinkle with paprika!

Serves 6-8

To ensure the best taste of this recipe, make sure the ingredients include Mayonnaise (not light or reduced fat), genuine VidaliaŽOnions, and make sure you cook the potatoes in their skins.
