Salad with Vidalia Onions

medium - large potatoes
- 1
small VidaliaŽOnion
- 2
hard boiled eggs
- 1tsp.
of salt
- 1/2
tsp. of pepper
- 1
cup of Mayonnaise (more or less as desired).

- Boil
potatoes with skin on. When cooked, allow to cool then peel and cut into bite
size pieces.
- Chop
the VidaliaŽOnion into fine pieces.
- Chop
the hard boiled eggs into small chunks.
- Mix
all ingredients together, salt and pepper to taste.
- Chill
and enjoy!
- Optional:
Garnish with hard boiled egg slices and lightly sprinkle with paprika!
