German Potato Salad

  • 4 medium potatoes
  • 4 slices of bacon
  • 3 tblspn. of bacon drippings
  • 1 small Vidalia®Onion
  • 1 small green pepper
  • 1/2 cup of celery
  • 2 tblspn. sugar
  • 1tblspn. flour
  • 1tsp. salt
  • dash of pepper
  • 1/4 cup of vinegar
  • 1/2 cup of water
  • Optional: 2 hard boiled eggs





Next

  1. Boil potatoes with skin still on, cool, peel and cut into bite size pieces.
  2. Cook bacon until crispy
  3. Place slices of bacon between paper towels and press gently to absorb excess grease.
  4. Finely chop the Vidalia®Onion, celery and green pepper and sauté in saved bacon drippings.
  5. Mix sautéed vegetables with 2 tblspn. of sugar, 1 tblspn. of flour,1 tsp. of salt and a dash of pepper.
  6. Stir until smooth.
  7. Add 1/4 cup of vinegar and 1/2 cup of water to the mixture, bring to a boil and then simmer until sauce thickens.
  8. Crumble bacon slices over potatoes.
  9. Add the potato pieces and crumbled bacon to the sauce and toss until evenly coated with sauce.
  10. Optional: Garnish with hard boiled egg slices.
