Potato Salad

medium potatoes
- 4
slices of bacon
- 3
tblspn. of bacon drippings
- 1
small Vidalia®Onion
- 1
small green pepper
- 1/2
cup of celery
- 2
tblspn. sugar
- 1tblspn.
flour
- 1tsp.
salt
- dash
of pepper
- 1/4
cup of vinegar
- 1/2
cup of water
- Optional:
2 hard boiled eggs

Next
- Boil
potatoes with skin still on, cool, peel and cut into bite size pieces.
- Cook
bacon until crispy
- Place
slices of bacon between paper towels and press gently to absorb excess grease.
- Finely
chop the Vidalia®Onion, celery and green pepper and sauté in saved
bacon drippings.
- Mix
sautéed vegetables with 2 tblspn. of sugar, 1 tblspn. of flour,1 tsp. of salt
and a dash of pepper.
- Stir
until smooth.
- Add
1/4 cup of vinegar and 1/2 cup of water to the mixture, bring to a boil and then
simmer until sauce thickens.
- Crumble
bacon slices over potatoes.
- Add
the potato pieces and crumbled bacon to the sauce and toss until evenly coated
with sauce.
- Optional:
Garnish with hard boiled egg slices.
